Cancer 'slowed by cooked tomatoes'

A nutrient in cooked tomatoes has been shown in laboratory studies to slow the growth of - and even kill - prostate cancer cells, scientists said today.

Dr Mridula Chopra and colleagues at the University of Portsmouth tested the effect of the nutrient lycopene on the simple mechanism through which cancer cells hijack a body's healthy blood supply to grow and spread.

They found that lycopene, which is what gives tomatoes their red colour, intercepts cancer's ability to make the connections it needs to attach to a healthy blood supply.

The researchers, from the university's School of Pharmacy and Biomedical Sciences, are now calling for tests to check if the same reaction occurs in the human body.

Director of the research Dr Chopra said: ''This simple chemical reaction was shown to occur at lycopene concentrations that can easily be achieved by eating processed tomatoes.''

Lycopene is present in all red fruits and vegetables, but its concentrations are highest in tomatoes and it becomes more readily available and biologically active when it comes from processed tomatoes with a small amount of cooking oil added.

Dr Chopra said: ''I stress that our tests were done in test tubes in a laboratory and more testing needs to be carried out to confirm our findings, but the laboratory evidence we have found is clear - it is possible to intercept the simple mechanism some cancer cells use to grow at concentrations that can be achieved by eating sufficient cooked tomatoes.''

The research, which is published in the British Journal of Nutrition, was part-funded by Heinz after the food manufacturer asked for more research to follow up earlier studies by the same researchers which showed a significant increase in lycopene levels in blood and semen samples after subjects ate 400g (14oz) of processed tomatoes for two weeks.

Dr Chopra and her colleagues Simone Elgass and Alan Cooper said they had a firm agreement they would publish their results irrespective of the outcome.

Cancer cells can remain dormant for years until their growth is triggered through the secretion of chemicals which initiate the process of linking cancer cells with endothelial cells which act as healthy gatekeeper cells lining blood vessels.

This allows the cancer cells to reach out and attach to the blood supply.

In the laboratory experiments, lycopene was shown to disrupt this linking process, without which cancer cells cannot grow.

The researchers explained that all cancer cells use a similar mechanism (angiogenesis) to ''feed'' upon a healthy blood supply.

They said there was added importance of this mechanism for prostate cancer because lycopene tends to accumulate in prostate tissues.

Dr Chopra said: ''The important thing is for sufficient lycopene to reach where it can matter. We know that in case of prostate tissues it gets there.

''We have tested this in the labs but we don't yet know if the same action will happen in the body.

''Individuals will vary in how much lycopene their bodies make available to fight cancer cell growth and the ability of lycopene to 'intercept' in this way in the body is likely to vary between tomato products - both processing and cooking with fat have previously been shown to make lycopene more effective biologically.

''The type of tomatoes which offer the most effective lycopene also differs and more tests need to be done to find the best breed of tomato for this purpose.''

It was suggested in their previous research that smokers might have to consume more tomatoes than non-smokers to achieve the benefits of lycopene due to the presence of high oxidative stress in smokers.

Eleanor Barrie, senior science information officer at Cancer Research UK, said: ''Some existing cancer drugs target the formation of new blood vessels, but more research is needed to show how they could be used to help cancer patients.

''This small study doesn't directly tell us if lycopene has any effect against cancer, but research like this can help us to understand more about how the chemical affects blood vessel formation.''

Rs1-a-kg price in market depresses them

(The Hans India) The vegetable farmers-cum-vendors dumped 20 tons of tomatoes into the underneath of Manair bridge protesting against the lowest prices offered for their crop from the buyers at Sircilla town in Karimanagar district on Thursday.

The price for tomatoes was Rs10 per kg was slashed to Rs 1 per kg on Thursday making frustrated farmers dump the tomatoes making it useless for everybody.

The vendors on the other hand claimed that due to sudden increase in in-flows made them to slash the price as they don’t have the storage facilities.

This has been the scene throughout the district as there is no minimum support price offered to tomatoes and most farmers, who sell tomatoes themselves, were in distress. There are no cold-storage facilities to store tomatoes, was the general comment by the vendors.

A farmer Chandraiah said that tomato should get minimum support price from the Government and it should be regulated. He blamed that the vendors and middlemen were ruining the lives of the farmers, which have become more miserable. Vendor Vajramma said that a lot reserves of tomatoes made the price so low.

The farmers, disappointed curse for their present status as they claim agriculture was never lucrative, not worth for living.

Indian tomatoes flooding Pakistan, pushing up domestic prices

NEW DELHI: Lured by high profits, Indian traders are flooding the Pakistan market with tomatoes, affecting domestic supplies and pushing up prices back home.

Truck loads of tomatoes sourced from Delhi and Nashik are entering Pakistan through Attari-Wagah border in Amritsar daily, traders said.

"As many as 80-90 trucks of tomatoes (each carrying about 16 tonnes) are crossing Attari-Wagah border every day," Rajdeep Singh Uppal, vice-president, Amritsar Export Association said.

This has been happening for over two weeks, he said, adding that the trend is expected to continue for a month.

Rajendra Sharma, a member of Delhi agriculture marketing board, said supply of tomatoes to Pakistan is one of the reasons for continued high retail prices of the vegetable in Delhi at Rs 20-25 a kg.

Rajendra Chug, general secretary of Delhi's Azadpur market (Asia's biggest vegetables & fruits market) said that on average 10-12 trucks laden with tomatoes are heading for Pakistan everyday.

Uppal and Chug said rush of tomatoes to Pakistan is triggered by relatively high prices there because of damage to the crop due to floods in the key producing Sindh region.

Chug said the Indian tomato is selling between Rs 25-30 (Indian currency) a kg in Pakistan. The price of the same vegetable in Delhi stood from Rs 8-15 per kg in wholesale, traders in the Azadpur market said.

Uppal said Indian tomato is selling for around USD 350-400 (Rs 17,850-Rs 20,400) per tonne in Pakistan.

Ajit Shah, president of Mumbai based agriculture export association said around 100-125 tonnes of tomatoes from Nashik is finding its way to Pakistan by road through Wagah.

R P Gupta, director, NHRDF (established by agri- cooperative Nafed for research and improving productivity of agri crops) said tomato production reaches a high level in the Nashik district of Maharashtra between September and October.

It is also the only region during the period to produce the staple vegetable.

Key tomatoes producing regions like Nashik, Pune and Ahmadnagar provide the supplies to the entire northern region including Delhi during the period, Gupta said.

The mild climate in the region during this period is best suited for cultivation of tomatoes, the NHRDF (National Horticulture Research and Development Foundation) director said.

Nearly 2,000 tonnes of tomatoes are arriving in Pimpalgaon market yard daily, Gupta said.

JOURNAL: Evaluation of Processing Tomatoes From Two Consecutive Growing Seasons

ABSTRACT: Peelability is an important quality parameter in the selection of tomato cultivars (cvs.) for whole peeled and dice processing. Six processing tomato cvs. were evaluated in two consecutive years to examine the effects of cv., maturity and physical attributes on peelability and yield. Physical attributes of the raw tomatoes (size, weight, pericarp wall thickness, color) and processed paste quality (pH, titratable acidity, soluble solids, Bostwick consistency, serum viscosity, color) were determined.  
Large variations in physical attributes and paste quality were observed in selected tomato cvs. and maturities. In general, most of the attributes indicative of paste quality were more desirable at the less mature (e.g., pink) stage and declined with maturity. Statistical analysis suggests that there were significant differences in percentage of peeled tomatoes, peel index, and yields of whole peeled and diced tomatoes between two consecutive growing years.

PISANG 

Pisang yang banyak terdapat di pasaran dan disukai oleh masyarakat di antaranya adalah:
  1. Pisang barangan
    Pisang barangan sangat terkenal sebagai pisang meja. Panjang buah 12-18 cm dan diameter 3-4 cm. Warna kullit buah kuning kemerahan dengan bintik-bintik coklat. Warna daging buah agak oranye. Rasa daging buah enak dan aromanya harum.
  2. Pisang raja
    Pisang raja sering diolah menjadi pisang goreng. Panjang buah 12-18 cm dan diameter 3-4 cm. Warna kullit buah kuning warna daging buah kuning kemerahan. Rasa daging buah manis dan terasa agak kasar.
  3. Pisang sere
    Pisang ini berukuran kecil. Warna kullit buah kuning kecoklat-coklatan dengan bintik-bintik coklat kehitaman. Kulit buah tipis. Warna daging buah putih. Rasanya manis dan aromanya harum.
  4. Pisang kepok
    Pisang kepok banyak diolah menjadi pisang goreng. Daging buah ada yang berwarna putih dan ada yang kuning. Yang berdaging kuning lebih enak dibanding yang putih.
  5. Pisang mas
    Pisang ini merupakan pisang meja. Pisang mas berukuran kecil. Kulit pisang mas matang berwarna kuning cerah. Kulit buah tipis, rasanya manis dan aromanya kuat.
  6. Pisang Ambon lumut
    Pisang ini merupakan pisang meja. Kulit buah matang berwarna hijau atau hijau kekuning-kuningan dengan bintik coklat kehitaman.Daging buah berwarna putih kemerahan dan lunak. Rasanya manis, enak dan kuat aromanya.
  7. Pisang nangka
    Pisang nangka hanya digunakan untuk olahan. Warna kulit pisang matang adalah hijau. Rasa daging agak manis.
  8. Pisang Lampung
    Pisang ini adalah pisang meja. Bentuknya mirip dengan pisang mas. Rasanya manis dan aromanya harum. Daging buah pisang mengandung energi, protein, protein, lemak, berbagai vitamin dan mineral seperti yang dapat dilihat pada tabel 1:
Ada beberapa produk yang dapat dibuat dari pisang, yaitu tepung pisang, pisang sale, keripik pisang, selai pisang, keripik binggol pisang dan dodol pisang.

PEPAYA

Di Sumatera Barat ditanam jenis "pepaya semangka" dan "pepaya burung". Masing-masing mempunyai karakteriktik sebagai berikut:

Buah pepaya mengandung kalori (46 K), protein (0,50 gram), karbohidrat (12,20 gram), kalsium (23 mg), fosfor (12 mg), besi (1,7 mg), vitamin A (365 SI), vitamin B1 (0,04 mg), vitamin C(78,9 mg) dan air (86,7 mg).  

Komoditi dari Pepaya 

Ada dua komoditi yang dapat diperoleh dari pohon pepaya, yaitu enzim papain dan buah pepaya.

Enzim papain adalah enzim protaese yang dapat merusak struktur primer protein, yaitu ikatan antar asam amino pada rantai polimer asam amino.

Buah pepaya dapat dijadikan sayur, manisan, asinan (pikel), saus dan selai. 

Penanganan Lepas Panen 

Buah dipetik dari pohon (panen) adalah buah yang telah matang petik. Buah yang matang petik mempunyai daging buah yang berwarna merah atau kuning cerah, bila kulit buah dilukai tidak banyak mengeluarkan getah dan rasanya agak manis. Buah ini harus dilindungi dari memar dan luka. Jika disimpan pada suhu kamar, dalam tiga hari buah sudah matang konsumsi dimana daging buah menjadi lunak, dan lebih manis. Buah yang sudah matang konsumsi, dalam 4 hari saja sudah mulai membusuk. Agar buah yang matang konsumsi tidak cepat membusuk perlu dilakukan penyimpanan pada suhu dingin (7,2 0 C) dengan kelembaban relatif 85-90. Pada kondisi tersebut diperkirakan buah pepaya mempunyai daya tahan simpan selama 15 sampai 20 hari. 

JERUK 

Di Indonesia terdapat banyak jeruk, diantaranya adalah jeruk keprok, jeruk siam, jeruk manis, jeruk nipis dan jeruk kesturi. Pada umumnya jeruk belum menjadi bahan baku industri pengolahan.

Jeruk rasanya manis pada umumnya dikonsumsi langsung. Jeruk nipis, jeruk keprok dan kesturi digunakan sebagai bumbu masakan. Jeruk siam yang berukuran besar yang rasanya tidak begitu manis pada umumnya dikonsumsi juga secara langsung. 

MARKISA 

Tanaman markisa berasal dari Brazil. Tanaman ini disebarkan pertama kali ke seluruh dunia oleh bangsa Spanyol.

Saat ini, terdapat 2 (dua) jenis markisa, yaitu markisa ungu (Passiflora edulis) yanhg tumbuh di daratan tinggi (1200 m di atas permukaan laut/dpl) dan markisa kuning (Passiflora flavicarva) yang tumbuh di daratan rendah ( 0-800 m dpl).

Markisa yang ditanam di Sumatera Barat adalah markisa manis dengan nama Passiflora edulis forma flavicarva. Buah yang masih muda berwarna ungu hijau dan berubah menjadi kuning setelah matang. Rasa buah ini adalah manis dengan sedikit asam dan segar. Tanaman ini banyak ditanam di Alahan Panjang, Solok pada ketinggian 1000-1500 m dpl, suhu 15-20 0 C dan kelembaban 90-95 % 

BENGKUANG 

Bengkuang (Pachyrrhizus erosus (L) Urb) adalah tanaman terna yang merambat. Hasil utama tanaman ini adalah umbi yang berwarna putih berbentuk gasing, berkulit, mudah dikkupas, dan dapat dimakan. Daun dan biji mengandung minyak yang tidak berwarna dan mudah menguap. Minyak ini mengandung racun derrid.

Tanaman ini berasal dari Amerika tropis. Pada abad ke 17 (jan Rumphius) tanaman ini masuk ke Ambon melalui Manila. Saat bengkuang banyak ditanam di Jawa dan Madura pada daratan rendah. Padang adalah salah satu tempat di luar Jawa dan Madura yang menjadi penghasil bengkuang. 

Bengkuang dapat dipanen pada umur 6~11 bulan. Bengkuang gen berumur lebih pendek. Pada umur 4~5 bulan sudah dapat dipanen. Bengkuang Badur dipanen pada umur 7 bulan. Umbi bengkuang dapat dimakan segar, diolah menjadi pikel, manisan, atau diekstrak tepungnya untuk bahan kosmetika. 

TOMAT 

Tanaman tomat (Lycopersicum sp) berasal dari Amerika tengah dan Amerika Selatan, yaitu di sekitar pegunungan Andes dan Brazilia. Dari sana, tanaman ini menyebar ke Meksiko dan Amerika Utara serta seluruh dunia.

Saat ini telah ditemukan berbagai spesies tomat, yaitu tomat biasa (L.pimpinellifolium), tomat apel (L. commune), tomat kentang (L. grandifolium), tomat kriting (L. validum) dan tomat cherry (L. cerasiforme).

Di Indonesia terdapat 4 varietas tomat unggul, yaitu:
  1. Tomat intan: tanaman ini dapat tumbuh pada daratan rendah sampai tinggi. Tanaman ini tahan penyakit layu bakteri. Hasil 12,4 ton/hari.
  2. Tomat ratna: tanaman ini dapat tumbuh pada daratan rendah sampai tinggi. Tanaman ini juga tahan penyakit layu bakteri. Hasilnya 12 ton/tahun.
  3. Tomat berlian: tanaman ini dapat tumbuh baik pada daratan rendah. Tanaman ini juga tahan penyakit layu bakteri. Hasilnya 13 ton/tahun.
  4. Tomat mutiara: tanaman ini dapat tumbuh pada daratan rendah sampai tinggi. Tanaman ini juga tahan penyakit layu bakteri. Hasilnya 14 ton/tahun. 

Tanaman tomat membutuhkan banyak sinar matahari untuk pertumbuhannya (8jam/hari) dan hujan yang cukup tinggi, yaitu 750-1250 mm/tahun. Untuk budidaya tanaman ini membutuhkan tanah liat berpasir yang subur, gembur, banyak mengandung humus danmencapai sirkulasi udara yang baik. pH tanah yang dikehendaki adalah 5-6.

Tomat dapat diolah menjadi berbagai jenis makanan dan masakan seperti: saos, selai, chutney, yam dan catsup. 

CABAI 

Tanaman cabe (Capsicum sp.) terdiri dari cabe merah (C. annum L.) dan cabe rawit (C. frutescens). Cabe merah yang buahnya relatif besar disebut dengan cabe merah besar dan cabe merah yang buahnya ramping disebut cabe keriting. Di Sumatera Barat, Cabe yang banyak ditanam adalah cabe merah keriting. Rasa cabe ini lebih pedas dibandingkan cabe merah besar.

Saat ini juga terdapat cabe hibrida yang buahnya berukuran besar, yaitu pabrika, hero, long chili dan hot beauty. Diantara ke tiga cabe hibrid tersebut, yang palling banyak dibudidayakan adalah hot beauty.

Cabe merah dapat ditanamn di daerah daratan rendah dan daratan tinggi yang tidak lebih dari 2000 m dpl, pada tanah subur dengan suhu pH 5,5~6,8. Suhu udara ideal bagi pertumbuhan cabe adalah 24~27 0 C.

Cabe dapat dipanen pada umur 75~80 hari, dan panen berlangsung selama 1~2 bulan. Hasil yang diperoleh sekali penanaman dapat mencapai lebih dari 20 ton per Ha.

Sampai saat ini, cabe pada umumnya dikonsumsi segar sebagai bumbu masakan. Di Sumatera Barat, produk cabe yang sudah dikembangkan adalah cabe giling yang diawetkan dengan garam dan asam benzoat. Cabe ini dijual eceran dan dipajang tanpa kemasan, hanya diletakkan di dalam baskom.

Produk cabe lain yang dapat dikembangkan adalah cabe gilingg dalam kemasan, sambal, cabe kering dan cabe bubuk. 

BAWANG 

Tanaman bawang merah (Allium ascalonicum L.) diduga berasal dari Asia Tengah dan telah dibudidayakan semenjak 5000 tahun yang lalu. Tanaman ini dapat ditanam di daratan rendah sampai daratan tinggi yang tidak lebih dari 1200 m dpl. Di daratan tinggi umbinya lebih kecil dibanding daratan rendah.

Tanaman bawang merah memerlukan udara hangat untuk pertumbuhannya (25`32 0 C) dengan curah hujan 300 sampai 2500 mm pertahun. Tanah yang cocok untuk tanaman ini adalah tanah lempung berpasir dengan keasaman rendah (pH 6,0~6,8).

Bawang merah dapat dipanen pada umur 90~150 hari. Umbi yang sudah dapat dipanen ditandai dengan lunaknya jaringan pada leher akar. Pemanenan terlalu dini harus dihindarkan karena selama penyimpanan pada umbi akan tumbuh akan sekunder.

Umbi bawang merah mengandung minyak atsiri, diantaranya terdiri dari senyawa propildisulfida, alilaldehid dan isotiosianat sebanyak 12,-~62,0 mg per 100 gram besat basah. Senyawa tersebut merupakan lacrimatory (penyebab menetesnya air mata).

Umbi bawang merah dapat digunakan sebagai obat nyeri perut, serta penurun kadar gula dan kolesterol. Kegunaan utama bawang merah adalah sebagai bumbu masak.
